Description

Just as in the 12th Century, the village itself still plays an essential role in our wine and oil production. The interiors of its ancient houses, churches, underground passages and deconsecrated churches have been discreetly converted into wine cellars, bottling plants and olive presses up to the ceiling in the latest equipment and all connected by an amazing underground “wineduct.” Thus Volpaia is not just another magnificent tourist attraction, but a thriving hive of activity whose inhabitants are all directly or indirectly involved in the winery.

Francesco Sabbadini in the kitchen and Vito Molaro at the front of house will be delighted to serve you traditional Tuscan dishes and more. Both young and enthusiastic but very experienced, Francesco Sabbadini received his training as a chef in some of the best Italian kitchens. Their menus are tasty and imaginative, with something for everyone. At lunch they offer a light set menu, but you're just as welcome to sit down to one of their special salads or omelettes and a glass of wine. Dinner is more formal and elaborate, but Vito is always ready to make suggestions and meet your requests. Guests are seated either in one of the inside rooms or outside on the shady terrace running along the castle wall. The secret cellar where our old wines are stored is also available for small exclusive parties.
